Singing Christmas carols tonight, tree trimming and sipping Joe’s Eggnog Supreme, which is blogworthy:

1 dozen medium eggs, locally produced on pasture – you know: the ones with bright orange yolks and no salmonella. We get ours from either Emery Sparling, our partner Ev’s sweet three year-old who raises chickens, or Paul Hain in Tres Pinos, http://www.hainranchorganics.com
1 cup sugar
1.5 quarts whole milk
1 pint heavy cream, whipped
1 750-ml bottle Cognac
Nutmeg
2 tsp. vanilla
Separate eggs, beat yolks in large serving bowl, adding sugar while beating. Stir in milk, cream and vanilla. Slowly add cognac and refrigerate for one hour. Before serving, whip egg whites stiff. Mix into eggnog, dust with nutmeg.

Have to admit, I’m not a huge eggnog fan. I’d rather use all those calories on chocolate, but a sip is fun while we decorate the tree and I love that Joe makes it every year. There’s just nothing that beats a warm fire, decorating the tree (burnt out lights and all) and good spirits! Merry Christmas and warm wishes for a Happy New Year!
